Super Seed Granola Bars

Ingredients
1 cup old-fashioned rolled oats
1 cup whole raw cashews or almonds
2 Tbs unsweetened shredded coconut
1/4 cup Super Seed Mix (See Recipe Super Seed Mix)
2 Tbs semisweet mini chocolate chips or cacao nibs
1/2 tsp salt
3 Tbs coconut oil or grapeseed oil
3 Tbs Nature Nate’s® 100% Pure Raw & Unfiltered Honey
1 tsp vanilla extract
Directions
  1. Preheat oven to 350° F.
  2. Add the oats, nuts and coconut to a food processor.
  3. Pulse several times to process into a fine crumble.
  4. Transfer to a bowl.
  5. Add the remaining ingredients.
  6. Stir until the liquid is incorporated and the mixture holds together when pressed.
  7. Line an 8 x 8 pan with parchment paper, leaving excess hanging over the sides.
  8. Pour the mixture into the pan.
  9. Use a spatula to firmly press into an even layer.
  10. Place in the oven. Cook for 20 minutes. Remove from oven.
  11. Let cool completely in the pan.
  12. Use the parchment paper to lift the granola out of the pan.
  13. Cut into 8 bars. Wrap individually, and place in an airtight container. Store in the refrigerator for up to 2 months or in the freezer for up to 6 months.
